Salicornia: A Gourmet Delicacy:

Salicornia (sea asparagus) is a small green succulent plant. It grows naturally in salt marshes and is one of the most salt-tolerant species. Salicornia is a highly prized for its unique flavour and nutrition and is often used in recipes by top-chefs across the world. Salicornia can be enjoyed as a fresh salad vegetable or used in curries, soups and pickles. It can reduce or eliminate the use of salt and is sometimes called herbal or bio-salt. Salicornia is known for its role in environmental preservation. Saline wasteland and salt marshes are ideal for growing Salicornia.

Farmers can turn barren land, including deserts, into arable land with minimal resources by planting this vegetable. Salicornia is cultivated in the village of Lodhva, in the Indian state of Gujarat, as part of a novel integrated water management system. The Salicornia crop is used to eliminate the brine discharge from purification of salty groundwater. As well as providing a valuable commercial crop for the area its cultivation is part of providing the village with clean, safe water as well as a new delicacy to local restaurants.
